Apples labeled "controlled atmosphere" must be stored under certain conditions in New York State. These rules are made by the New York State Department of Agriculture and Markets.
"Controlled atmosphere" apples must be:
- stored in an environment less than 5% oxygen; and
- kept for 60-90 days.
